It’s a beautiful soup so perfect for fall entertaining and elegant enough to serve at your holiday gatherings. It’s easy enough to make for a weeknight meal as well. So many people have written to tell me that it has become a regular menu item for them. Me too! I love to have a side of Crispy Air Fried Smashed Potatoes and I can cook them right in my electric pressure cooker using my Mealthy Crisp Lid that turns a 6 or 8 QT pressure cooker into an air fryer! So when Tom is cooking something in the Breville I can still air fry using the Crisplid – it works great! You can watch my Mealth Crisp Lid demonstration and read the blog post.


You can serve it up piping hot in mugs as your guests arrive. They can sip on it (no need for spoon) while you are putting the finishing touches on the meal. Or you can include it as the first course in a bowl sprinkled with a little fresh chives on top. I usually make a double batch in my 8 QT Mealthy Multi Pot pressure cooker. It also freezes beautifully! You can choose to serve it over whild rice or brown rice and top it with some fresh arugula – yummy!

In addition to the delicious soup recipe you will also get my Strawberry Balsamic Dressing recipe that contains no oil and is made without nuts. The soup looks amazing! Not a curry fan though! Just curious if you have tried any other flavor profiles with this soup? I just left the curry out and it was still great!! Love all your videos and recipes!!
No I haven’t tried any other seasonings as I was going for a curry soup for this one. You can have fun experimenting with different seasonings and go with the ones you usually like best.

My husband and I love those smashed potatoes! He calls them the “Who needs tortillas, potatoes.” I used potatoes I had cooked in my instant pot, then covered them with chili ( next time I will try lentil tacos), your spicy cheese sauce, salsa, and avocado. We loved this! It is our favorite!!! Thank you!!!
