The Instant Pot pressure cooker is amazing for making, soup, chili, stews, rice and beans. It also can be used to lightly steam vegetables. Did you know you can set it for 0 minutes? That is the perfect amount of time to lightly steam some greens. I even made a video so you could see just how quick and easy this can be.
We really like this vegetable mix from Trader Joe’s. It is delicious served lightly steamed or leave it raw and add it to a green salad. Today I will show you how to steam it for a warm side dish or a savory breakfast. If you don’t have a Trader Joe’s where you live look in your local grocery store to see if they have something similar. You can also make up a batch of this yourself using a sharp knife to prep the vegetables or your food processor. Sometimes we will buy a weeks worth of the Cruciferous Crunch and toss the bags in the freezer. Since we are going to steam them it doesn’t hurt to freeze them. That way they don’t spoil before we eat them all up!
This is a good item to keep in the freezer. You can chop them up to use in a recipe. Saute to add to a baked potato with black beans and a Cheeze Sauce and some home made Salsa. Heat up some brown rice and add some of this mixture along with some balsamic vinegar and some tofu or beans – yum!
We buy these at Costco and they come in so handy. If you don’t have fresh mushrooms on hand you can reconstitute these for recipes. Tom likes to toss a few into his broth when he makes some Asian noodles with veggies. They have a nice earthy flavor and are chewy.

Not all Costco’s carry the dried mushrooms but you can ask them if they can stock them!

I added 1/2 cup more water and when it was done, to me it makes a very good vegetable soup, it’s SOS and tastes great. I’m thinking if I add different vegetables each time one can make different types of vegetable soups. I know a lot of people use their scraps to make their own veggie broth. I was thinking why not just use just the whole vegetable and turn it into soup.
