By the way, it was about 100 degrees the day I was trying to photograph my new creations outside in natural light. They were melting way faster than I could take photos.
It quickly melted before my eyes. Of course, I had to eat it, so it wouldn’t go to waste! Such is the life of a food blogger.
Bananas – you can try freezing oven roasted, peeled and diced or mashed, Japanese sweet potatoes or Hannah yams. They are not as sweet as very ripe bananas, so you made need to add some date paste, date syrup or date sugar to taste. I have not tried this so I don’t know how it will turn out.
Oat milk – use any kind of plant milk that you like.
Vanilla Powder – vanilla extract
Peanut Powder – peanut butter, but of course it’s going to be a much higher fat content.
Peanut Butter Chocolate Chip Variation: After the nice cream is creamy and smooth add 2 tablespoons chocolate chips and use the pulse function to incorporate them into the mixture.
Vegan Chocolate Sauce – Just 3 Ingredients

Peanut Butter Banana Nice Cream
- High powered blender or food processor
- 4 frozen bananas, very ripe, peeled
- 1/4 cup plant milk, I used JOI oat milk
- 3 tablespoons peanut powder, no added salt or sugar
- 1/8 teaspoon vanilla powder or vanilla extract
- Put all ingredients in blender or food processor fitted with an S blade. Process until smooth and creamy.
