I usually make a double batch of this salad dressing so we have leftovers to send home with our family. If you want a nut free Creamy Caesar Dressing I have one that is made with tofu.

My favorite salad mixture for the Caesar Dressing is, romaine lettuce, Persian cucumbers, red onions, shredded carrots, thinly sliced red onion and little tomatoes. We also add a little freshly ground black pepper. I dress the salad just before serving.

People tell me they eat more salads because of this Caesar Dressing! I love that.

The Caesar salad can be a side salad or a main dish.

To make it a main meal add some Garlic Chickpea Croutons and some BBQ Tempeh. To make the BBQ Tempeh I cube 8 ounces of tempeh, combine it with 3 tablespoons of BBQ sauce and bake on a baking sheet lined with parchment paper in a preheated 400 – 425 degree oven for 20-25 minutes. Delicious! You can sub firm tofu for the the tempeh.

I get most of my spices from Local Spicery – what a difference in flavor and quality. Milled in small batches so they are incredibly fresh.

Ultimate Vegan Caesar Dressing
Equipment
- Vitamix High Powered Blender
Ingredients
- 1 1/2 cup almond milk unsweetened
- 1 cup slivered almonds could sub cashews
- 1/4 cup nutritional yeast
- 1 tbsp chia seeds
- 1 teaspoon salt substitute or salt if you prefer
- 1 teaspoon kelp grandules
- 3 tbsp capers
- 6 small garlic cloves peeled
- 5 tbsp apple cider vinegar
- 2 tbsp Dijon mustard
- 2 Medjool dates pitted
- 1/2 tsp garlic powder
- freshly ground black pepper
Instructions
- Place the almonds or cashews in a bowl and cover with boiling water. Soak for at least 30 minutes to soften. Drain off the soaking water
- Place all of the ingredients in the blender container of a high powered blender. Blend until smooth and creamy.
- Chill until ready to serve.
- This tastes like the real deal – no one would know it’s vegan! Even non vegans love this dressing.

Sounds great. How long will it last in refrigerator? What are the calories for one serving?.

We usually finish the dressing within 4-5 days but it might last longer then that but it’s always gone by day 5 around here! I don’t provide nutritional information for my recipes but you could enter the recipe into one of the free on line nutritional calcualtors to obtain the information you desire.
My husband said this dressing is amazing! He never comments on dressings so I will definitely be making it again.
Tami is right, this dressing is fantastic! My 6 year old granddaughter just ate 2 helpings of salad with this dressing on it and she typically isn’t crazy about salads.
