Oven Roasted Sweet Mini Peppers

Simple easy way to cook sweet mini peppers. Serve as an appetizer or as a side dish or top your salads with some.

Ingredients

sweet mini peppers, washed and dried
Instructions
Preheat oven to 425 degrees.
Wash sweet mini peppers leave whole and stems intact
Place prepared peppers on a rimmed baking sheet that is lined with parchment paper or a silpat mat.
Bake for 30 - 35 minutes or until light brown spots start to appear.
Remove from oven and let cool. Store in refrigerator in a dish with a lid.
