Watermelon Lime Popsicles

Just two ingredients needed to make these cool and refreshing treats.

Equipment

  • Blender, zester, juicer, citrus squeezer, popsicle molds

Ingredients
  

  • 4 cups cubed seedless watermelon or 40 ounces
  • 2 each limes, zested and juiced

Instructions
 

  • Put everything in the blender and process until smooth.
  • Pour into popsicle molds.
  • Freeze according to the instructions for your style of molds.
  • For my red silicone tray - it says to freeze for one hour before inserting the wooden sticks. Then freeze for another 4 hours or until firm. How long will depend on your molds and your freezer. I recommend freezing them over night.
  • Once frozen solid, remove from the molds and place in freezer baggies so the mold is now free to make more flavors.
  • Optional: My family isn't fond of mint but I think a little fresh mint would be lovely in the popsicles. Maybe not for the children - but I think adults would like it.

Notes

Serving Tip:
To serve to a crowd, spread crushed ice over the bottom of a water proof tray and place the popsicles over the top to keep them from melting before everyone is served. You can do this with the popsicles in their individual bags and it will work well. If you place them directly on the ice, not in a bag, some of the ice will stick to the popsicles - not a big deal but just want to let you know that happens.
