Blender Waffles

So easy and delicious for breakfast, brunch, breakfast for dinner or even dessert. How many waffles this recipe makes is going to be different depending on the size of your waffle iron. I get 9 waffle squares with my Cuisinart waffle maker. I fill the waffle iron twice with just enough batter leftover to fill one square at the end.

Ingredients
  

  • 4 cups rolled oats, divided
  • 1 cup buckwheat flour, millet flour or use all oat flour
  • 2 1/4 cups plant milk, unsweetened add the apple cider vinegar
  • 1 tbsp apple cider vinegar add to the plant milk
  • 2 tbsp Ground flax seeds
  • 2 Bananas, very ripe, peeled
  • 2 tsp ground cinnamon
  • 1 tsp vanilla powder - or vanilla extract
  • 1/2 tsp ground nutmeg

Instructions
 

  • In a jar or bowl, add the vinegar and ground flax meal to the plant milk, stirring to combine. Set aside.
  • In the container of a high powered blender add just 3 cups of rolled oats (set the remaining cup of oats aside) process until the oats turn into a flour. Empty into a bowl and set aside.
  • In the same blender container, add the plant milk, apple cider vinegar mixture, peeled bananas, blend until smooth and creamy.
  • Add the ground oats, buckwheat flour, vanilla powder, cinnamon and nutmeg to the blender. Process until well combined, use the tamper to help it blend. When well blended stir in the remaining 1 cup of rolled oats. This adds a nice rustic look and texture. Add more plant milk if needed.
  • Preheat a non stick waffle iron according to the manufactures instructions. For my waffle iron I set it on level 4. When the waffle iron is ready, spoon batter onto it and spread out the batter evenly. Close the lid and don't peek for 8 - 9 minutes. 9 minutes seems to work perfectly for my Cuisinart Begian Waffle Maker. Check the waffles, remove if they look like they are browned and cooked all the way through. Put on a cooking rack. Repeat with remaining batter.
  • The batter gets thicker as it sits, if it gets to thick add 2-4 tablespoons of plant milk and give it a stir.
  • Serve with maple syrup, date syrup, nut butter, cooked apples, blueberry sauce, warm applesauce, or fresh fruit, a sprinkle of unsweetened coconut and a dusting of cinnamon and freshly grated nutmeg.

Notes

Waffles can be frozen in freezer bags. To reheat use the toaster oven or a toaster.
If you want to feed waffles to large group, you can make them in advance, and heat them up in a toaster oven. Or as you make waffles fresh, put them on a cooling rack set over a baking sheet and keep it in an oven set to 200 degrees. This will keep them warm until you are ready to serve.
