Ultimate Vegan Caesar Dressing

Garlicky, tangy, thick and creamy so it clings to the salad greens. Everyone loves this dressing, even the non vegans! I make a double batch!

Equipment

  • Vitamix High Powered Blender

Ingredients
  

  • 1 1/2 cup almond milk unsweetened
  • 1 cup slivered almonds could sub cashews
  • 1/4 cup nutritional yeast
  • 1 tbsp chia seeds
  • 1 teaspoon salt substitute or salt if you prefer
  • 1 teaspoon kelp grandules
  • 3 tbsp capers
  • 6 small garlic cloves peeled
  • 5 tbsp apple cider vinegar
  • 2 tbsp Dijon mustard
  • 2 Medjool dates pitted
  • 1/2 tsp garlic powder
  • freshly ground black pepper

Instructions
 

  • Place the almonds or cashews in a bowl and cover with boiling water. Soak for at least 30 minutes to soften. Drain off the soaking water
  • Place all of the ingredients in the blender container of a high powered blender. Blend until smooth and creamy.
  • Chill until ready to serve.
  • This tastes like the real deal - no one would know it's vegan! Even non vegans love this dressing.
