Oven Roasted Sweet Mini Peppers

Simple easy way to cook sweet mini peppers. Serve as an appetizer or as a side dish or top your salads with some.

Equipment

  • oven, baking sheet

Ingredients
  

  • 1 pound sweet mini peppers, washed and dried

Instructions
 

  • Preheat oven to 425 degrees.
  • Wash sweet mini peppers leave whole and stems intact
  • Place prepared peppers on a rimmed baking sheet that is lined with parchment paper or a silpat mat.
  • Bake for 30 - 35 minutes or until light brown spots start to appear.
  • Remove from oven and let cool. Store in refrigerator in a dish with a lid.
